Let me give you a little background information on English Afternoon Teas - To Set the Scene for You.
In the 1880s Afternoon Tea became a fashionable social event in England. Upper-class and society women would change into long gowns, gloves and hats for their afternoon tea which was usually served between four and five o'clock. The maid or butler would bring it to the drawing room, a conservatory, or even outside in the garden if the weather permitted.Traditional afternoon tea menu consists of a selection of dainty sandwiches. Scones are served with clotted cream and preserves, and there are always cakes and pastries. Some of the recipes have been taken from my battered 1941 recipe book which was sold to aid the British War Relief. You will find the ingredients economical and some of the the recipes rather plain, but with the wonderful selection of teas we have these days, I think it is important not to include too much sugary stuff, as it detracts from the flavor of the tea. Always serve thinly sliced lemon, honey and a sugar substitute. Please, always consider any diabetics too, and if unsure, make it a question on your invitation.
