How To Make Tea Properly - Fresh Is The Key

The following will explain how to make tea, for each general type.

Always Use Fresh Tea, Freshly Drawn Water and a Freshly Washed Teapot!

Here is a quote from the year 1882, that remains true today :

"An earthen teapot is more wholesome for steeping tea than tin. The water of which it is made should always be freshly boiled, and boiling hot when added to the tea; the teapot rinsed and scalded each time the tea is made. Many a nice cup of tea has been spoiled by not scalding the teapot."



How to Make Tea - Instructions For Black Teas, Oolongs and Puehrs

How to make tea? - Put the tea in an infuser (tea-ball), strainer or (recommended) directly in the bottom of the teapot. Steeping - or infusing - this way, without an infuser or strainer, gives the tea more room to unfold and release flavor.

Start with one heaped teaspoon per cup to be made (unless instructions state otherwise). The amount of loose tea you use will depend on the type and strength of the tea, as well as your individual taste, so experiment a little. If the tea is too strong, simply add more water.

If using tea bags, the measuring has already been done for you - usually one tea bag per cup. Again, make sure that the tea bags are fresh. Most tea bags consist of small pieces of leaves that become stale quicker than a loose leaf variety.

Pour boiling water over the tea and stir gently, just a couple of times. Use an amount in proportion to the quantity of tea you have added. 1 cup = 1 teaspoon of tea.

The ideal water temperature varies based on the type of tea being made. The more fermented or oxidized the tea - black tea, oolongs and puehrs, the hotter the water should be.

Always store your tea in an airtight tin or container in a dark place, away from light. Do not put in the fridge.

Green Teas & White Teas

How to brew green tea? - White and green teas are less fermented or oxidized than black teas, and therefore require water that is below boiling point, (170-185F - 76-85C).

When the water boils, turn off the heat and let the water cool. 30 seconds for white tea and about one minute for green tea, enough time to get your cup and saucer!

What Next?

Allow the tea to infuse. Cover the pot with a tea cozy, to keep it warm after removing the bags or leaves, otherwise it may become bitter.

Different teas require different steeping times. Check the packaging for instructions. It's usually between one and three minutes. Relax and pour. Add lemon, sugar or honey to taste.

How To Make Herbal Tea or Tisanes

Herbal "teas" or tisanes cannot be treated the same way as real tea.

Always read the instructions.

A Few Words About Teapots

I prefer to use a good old-fashioned, plain teapot, either ceramic or earthenware. They retain heat well. If you are having a very fancy tea, by all means use a silver or silver-plated teapot. The latter are silvered over a copper base and also retain heat well, it's just harder to get a tea cozy to fit them! Just like ceramic or earthenware teapots, wash sterling silver and silver-plated pots well after polishing, and always scald before using.

If you are purchasing a new teapot - a word of caution.

Many imported teapots today are really only for decorative use and may say "Not For Food Use." NEVER be tempted to use one as these may have a high content of lead or tin in the glaze. If in doubt, buy another.

A Few Words About Kettles

We all lead busy lives these days and it is easy to forget the kettle boiling merrily away for our next cup of tea.

If this is you, buy a whistling kettle that will alert you when it's ready. I use an electric one, I think power-wise these are the most efficient. The ones I buy cost less than $30 and last me about two years, after constant use.

If you must boil water in a microwave. Make sure it is actually boiling. It will bubble. Be very careful as you remove the cup from the microwave, it will be very hot too!
