Peach and White Chocolate Muffin Recipe

Chocolate Muffin Recipe - how about a slightly healthier version, Peach and White Chocolate Muffins...

This recipe results in everything you could ever want in a muffin; a crunchy muffin top, and a warm and moist interior, filled with tasty peaches and melted white chocolate.

Peach and White Chocolate Muffins

Makes 6 Jumbo Muffins

Ingredients:

1 1/2 cups all-purpose/plain flour

1/2 tbs baking powder

1/4 tsp baking soda

1/4 tsp salt

1 tsp cinnamon

70g butter, softened

1/2 cup caster sugar

1 large free-range egg

1/2 tsp vanilla extract

3/4 cup plain yoghurt/greek yoghurt

3/4 cup peaches (chopped into 1cm cubes)

1/2 cup white chocolate chips

Method:

Preheat your oven to 190 degrees celsius/375 degrees fahrenheit, and grease a six-hole muffin tin.Whisk the first five ingredients together in a bowl. Cream the butter and sugar in a large mixing bowl with a free-standing electric mixer. Add egg, and then beat in the vanilla essence. Alternate adding small amounts of the yoghurt and flour to the mix, ending with the flour. Fold in the chocolate chips and fruits. Divide the batter among the muffin cups, filling to the top or higher if possible. Bake for 20-25 minutes, or until golden and a skewer comes out clean. Cool on a wire rack.



These muffins are good served warm, the chocolate is all soft and gooey, or allowed to cool, and eaten later, although with muffins this delicious they’ll be lucky to last a few minutes!
