Method:
Peel eggs and place in a medium bowl. Slice eggs and mash coarsely.
Add mayonnaise, salt, pepper, and cress or dill and stir until well blended.
Butter bread on both sides lightly and add enough egg salad to equal the width of one slice of bread.
Carefully cut the crusts from sandwich with a long, sharp knife. Cut in half diagonally, then cut in half again.
Throw the crusts out for the birds to enjoy!
