Strawberry Cake Recipe

Recipe for Strawberry Courting Cake from The North of England

Strawberry Cake Recipe - Strawberry Courting Cake is very easy to make and complements a summer Afternoon Tea perfectly.

When I grew up in Lancashire the word 'courting' was commonly used; it meant 'dating'. There are many archaic terms still used in areas of Yorkshire and Lancashire, but as people have moved around from different parts of the UK, the language has become diluted, and a lot of the quaint old sayings have been lost. Read any of James Herriot's excellent books and you will come across a lot of these old words and sayings.



These cakes were made by a girl for her 'betrothed' and are basically a Victoria sponge cake with cream and strawberries.

  • 8 oz. Butter
  • 8 oz. caster sugar
  • 4 eggs beaten
  • 12 oz self-raising flour
  • 2-3 tablespoons fresh milk
  • 10 fl.oz. fresh double cream
  • 8 oz. strawberries sliced
  • sifted icing sugar to decorate.

Method:

Grease and Line the bases of 3 7" round cake tins

Cream the butter and sugar together until pale and fluffy and add the beaten eggs gradually, a little at a time, beating well.

Fold in the Flour and add in enough milk to make a dropping consistency.

Divide between the three cake pans and bake at 375 for 25-30 minutes, until well risen. Turn out and cool on a wite rack.

Whip the cream until it holds its shape. Layer two of the sponges with cream and arrange the strawberries on them.

Sandwich them all together and dredge the top with the icing sugar and decorate with a couple of strawberries.
