Tea Cakes Recipe - These Tea Cakes smell so wonderful as they bake, it's hard not to split and butter them as soon as they come out of the oven! - 1/2 cup butter
- 3/4 cup white sugar
- 1 egg
- 3 tablespoon of milk
- 1 3/4 cup sifted flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup of currants
Beat the sugar and egg together and sift in dry ingredients, then add the currants. Chill the dough. Roll into balls the size of walnuts. Dip tops in slightly beaten egg white, then sugar. Place sugared-side-up 2 inches part on an ungreased baking sheet. Bake until delicately browned. The balls flatten out some in baking and become glazed. Bake at 400 degrees for 12-15 minutes. Split and butter. Any left over cakes are great toasted for breakfast.
